Oil is the traditional way to finish an oak floor, and still the most natural-looking.
Oil soaks into the grain and hardens there, so the floor looks and feels like bare timber, with a soft sheen rather than a coated surface.
A scratch or worn patch can be cleaned, lightly abraded and re-oiled on its own. There is no need to sand the whole room.
Sweep or vacuum, clean with a soap made for oiled floors, and refresh busy areas with a maintenance oil when they start to look dry.
Both protect the oak well. The difference is how they look, how they wear and how they are repaired.
